Turkey Leg Enchiladas in Green Sauce

To celebrate opening day of spring turkey hunting, here is an easy wild turkey recipe! It's often difficult to come up with things to cook with the turkey legs, but this recipe is one of my favorites.

Ingredients

  • 1 turkey leg
  • 1 can of chicken broth
  • 1 can of cream of chicken soup
  • 1 small can of diced green chilis or jalapeƱos
  • 1/2 cup of sour cream
  • 1 can of green enchilada sauce
  • 2 cups of shredded cheese 
  • 6-8 tortillas
Shredded wild turkey meat.


Instructions

  1. Slow cook the turkey leg with a can of chicken broth for 5-6 hours in a crock pot/Instapot.
  2. Pre-heat the oven to 375F
  3. Shred the turkey meat
  4. Mix the turkey, cream of chicken soup, chilis/jalapenos, and sour cream together in a large bowl
  5. Warm the tortillas in the microwave for 15 seconds
  6. Fill the tortillas with the turkey mixture, roll up and place in a baking dish
  7. Smother with enchilada sauce and cheese
Pre-baked wild turkey enchiladas.

    Bake & Serve

    1. Bake for 20-30 minutes or until the enchilada sauce begins to bubble
    2. Garnish with toppings of your choice
    3. Serve with rice and beans
    All done and ready to eat!
